Ingredients
- 3 cups quick oats (300 g)
- 4 tbsp cocoa powder (40 g)
- 1 tbsp ground cinnamon
- Pinch of salt
- 2 tbsp chopped almonds (30 g)
- 3 bananas
- 2 tsp honey or sweetener
- 1 cup + 2 tbsp cream cheese or ricotta (300 g)
- 1 tsp honey (optional)
- Vanilla (to taste)
- ¾ bar sugar-free dark chocolate (75 g)
- 1 tbsp coconut oil or vegetable oil (15 ml)
- Chopped nuts (optional)
Method
- Toast the oats and immediately transfer to a bowl.
- Mix oats with cocoa powder, cinnamon, salt, and chopped almonds.
- Slice bananas and layer them over the oat base.
- Spread a thin layer of cream cheese mixture to fill gaps, then add remaining cream.
- Use cold cream cheese mixed with bananas, honey, and vanilla for the cream layer.
- Refrigerate the cake for 30 minutes.
- Melt dark chocolate with coconut oil, keeping temperature below 100°F (38°C).
- Pour chocolate glaze over the cake and optionally sprinkle chopped nuts.
- Refrigerate the cake for 1–2 hours before slicing.
