  • 1 cup cooked and mashed sweet potatoes (about 1 large sweet potato)
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup maple syrup (or agave syrup)
  • 1/4 cup cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • Optional: 1/4 cup chocolate chips or nuts for added texture

Method

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine the mashed sweet potatoes, almond butter, maple syrup, and vanilla extract. Mix until smooth.
  3. Add the cocoa powder, baking powder, and salt to the mixture. Stir until well combined.
  4. If using, fold in chocolate chips or nuts.
  5. Pour the brownie batter into the prepared baking pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean.
  7. Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
  8. Cut into squares and enjoy.
