Cabbage Rolls with Ground Beef and Yogurt Sauce

  • 1 head cabbage
  • 500 g ground beef
  • 1 egg
  • 80 g rice
  • 1 onion, finely chopped
  • 2 carrots, grated
  • 2 garlic cloves, finely chopped
  • 100 g bacon, diced
  • 1 spring onion, sliced
  • 1 tomato, diced
  • 200 g additional cabbage, shredded
  • 3 tbsp tomato sauce
  • 1 bunch parsley, chopped
  • 3 tbsp yogurt
  • 1 tbsp plain flour
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Preheat the oven to 180°C (350°F).
  2. Separate the cabbage leaves carefully.
  3. Bring a large saucepan of salted water to the boil.
  4. Boil the cabbage leaves until softened and flexible.
  5. Drain and leave them to cool.
  6. Combine the ground beef, egg and rice in a large bowl.
  7. Add the onion, carrot and garlic.
  8. Season with salt and black pepper.
  9. Cook the bacon in a frying pan until lightly browned.
  10. Add the bacon to the ground beef mixture.
  11. Stir in the spring onion, tomato, shredded cabbage and parsley.
  12. Place a portion of filling onto each cabbage leaf.
  13. Fold in the sides and roll tightly.
  14. Arrange the cabbage rolls in a baking dish.
  15. Mix the tomato sauce, yogurt and flour until smooth.
  16. Spoon the sauce over the cabbage rolls.
  17. Bake for approximately 30 minutes.
  18. Check that the filling is fully cooked.
  19. Season to taste and serve warm.
