Ingredients

  • 1 ripe mango, peeled and diced
  • 500 ml thick natural yoghurt
  • 200 g mixed berries
  • 1 orange, zest and juice
  • 1 tablespoon icing sugar, plus a little extra for serving
  • 1 small handful fresh basil leaves, torn or finely sliced

Method

11 steps
  1. Place the mixed berries in a bowl.
  2. Add the icing sugar, finely grated orange zest, a little orange juice and the fresh basil.
  3. Mix gently and leave the berries to macerate while preparing the mango.
  4. Place the diced mango in a small saucepan.
  5. Cook over low to medium heat until the mango softens and can be mashed into a thick purée.
  6. Allow the mango purée to cool.
  7. Spoon a layer of mango purée into the base of each of four serving glasses.
  8. Add a layer of thick natural yoghurt.
  9. Continue alternating mango purée and yoghurt until the glasses are filled.
  10. Top each sundae with the macerated berries and a light dusting of icing sugar.
  11. Refrigerate until chilled before serving.

Storage

For the best appearance and texture, assemble shortly before serving because the berries release juice as they stand.

Additional tips

  • Contains milk. Wash fresh berries thoroughly before use.
