- 1/2 cup raw lentils (100g)
- 1/4 cup chopped mushrooms (30g)
- 1/2 small onion
- 1 garlic clove
- 2 tbsp chickpea flour
- Chopped parsley
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp mustard
- 1/2 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/4 tsp black pepper
- Salt to taste
Method
- Do not over-blend the mixture to preserve texture.
- Combine raw chickpeas, raw lentils, chopped mushrooms, onion, garlic, chickpea flour, parsley, soy sauce, olive oil, mustard, smoked paprika, ground coriander, black pepper, and salt.
- Chill the mixture before shaping for better structure.
- Shape the mixture into 6 patties.
- Cook the patties on medium heat, pressing while cooking to create a crispy crust.
