Ingredients
- 2 eggs
- 2 potatoes
- Butter (to grease the muffin tin)
- Vegetable oil
- 1 onion
- 1 carrot
- Mushrooms
- 2 garlic cloves
- Salt
- black pepper
- sweet paprika
- 150 g ricotta
- 3 tablespoons cornstarch
- 100 g cheese
- 100 g mozzarella cheese
- 3 tablespoons Greek yogurt or sour cream
- 1 garlic clove for the sauce
- Dill
- Pickle
Method
- Rinse the potatoes well with water.
- Chop the onions, carrots, mushrooms, and garlic finely.
- Heat butter and vegetable oil in a pan and sauté the vegetables.
- In a bowl, whisk the eggs with salt, pepper, and paprika.
- Add the egg mixture to the potatoes and mix well.
- Stir in 150 g ricotta and 3 tablespoons cornstarch.
- Grease the muffin tin with butter.
- Fill the mixture into the muffin tin and top with 100 g cheese and 100 g mozzarella cheese.
- Bake in the oven at 180°C for 15 minutes.
- For the sauce, mix Greek yogurt or sour cream with one garlic clove, dill, and diced pickles.
