  • 6 cold large eggs
  • 15 g butter
  • 1 teaspoon crème fraîche or sour cream
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped chives, optional

Method

7 steps
  1. Crack the cold eggs directly into a cold, deep saucepan.
  2. Add the butter and place the saucepan over high heat.
  3. Stir continuously with a rubber spatula, scraping the bottom of the saucepan.
  4. After about 30 seconds, remove the saucepan from the heat while continuing to stir.
  5. After approximately 10 seconds off the heat, return the saucepan to the heat. Repeat this process for about 3 minutes, until the eggs are softly set and creamy.
  6. Remove the saucepan from the heat. Stir in the crème fraîche or sour cream to stop the cooking.
  7. Season with salt and black pepper. Garnish with chopped chives, if using, and serve immediately.
